My name is Elsa and I was born in Massawa in Eritrea. As a teenager I came to the Netherlands with my mother in the context of family reunification.

My youth took place in the Netherlands, so I feel both Dutch and Eritrean. My mother unfortunately died in the meantime, but I learned something very important from her: delicious Eritrean cooking. My mother made everything fresh, she thought it was very important. She wanted the best for us. she knew so many recipes from our home country Eritrea. She made her injera with teff, just like in Eritrea, and that is still there with me. Teff is a very healthy grain that only grows in the Ethiopian highlands. In honor of my mother, I have decided to start this eatery, in Antwerp: Elsie Baltna, means Elsie's fresh kitchen. That is what I stand for. I would like to get to know the exceptionally delicious eating tradition of Eritrea and Ethiopia in the wider world. And where is that better than in Antwerp, a cosmopolitan city.
